Toffee Apple

Like banana, apple is another fruit that can be fried in batter to make a delicious dessert.
Ingredients (Serves 2)
- 1 large apple (preferably Golden Delicious)
- 300g granulated sugar
- 1 tablespoon golden syrup
- 40ml of water
- 1 teaspoon white sesame seeds
- 2 litres of vegetable cooking oil
For the batter
- 120g self-raising flour
- 150ml cold water
Useful Tips
- For crunchy toffee coating, use 400g sugar and 40ml water to make syrup, after coating the fried apple pieces completely with the syrup, and then sprinkled sesame seeds, dip the toffee apple pieces into a bowl of coat water and remove immediately, the cold water hardens the syrup to a crunchy toffee coating.
Method
- Prepare the batter ahead of cooking. Mix 150g self-raising flour in 120ml of cold water, mix well until all the lumps have disappeared.
- Preheat an electric deep-fryer to high setting (200°C) with 2 litre of oil, or the manufacturer’s recommended maximum volume.
- Peel off the apple skin, remove the core and cut the apple into 3cm X 3cm cubes. When the oil has reached the required temperature, dip all the apple cubes into the batter, making sure the batter has coated each piece completely.
- Put each piece of batter-covered apple into the deep-fryer separately and fry until golden yellow, turning the apple to ensure an even result.
- Drain off excess oil from the fried apple pieces on kitchen paper towel.
- Prepare the syrup with 40ml of water and 20ml of oil in a preheated wok, add 300g sugar and 1 tablespoon of golden syrup and boil until the syrup thickens. Turn the heat off and put all the fried apple pieces into the syrup and rapidly toss the apple to let the syrup form a semi sticky coat, sprinkle the white sesame seeds and serve im- mediately on a serving dish.
